【轻乳酪蛋糕】

  • 玉米淀粉10g
  • 蛋清3个
  • 细砂糖50g
  • 柠檬汁数滴

Steps to make 【轻乳酪蛋糕】

  • 1.准备好需要的材料。
  • 2.将蛋清蛋黄分离,分别放入两个干净的容器里( 容器要保证无水无油)。
  • 3.低筋面粉和玉米淀粉混合过筛备用,黄油微波融化备用,奶酪加牛奶倒入一个可以手持的小锅里。
  • 4. 把小锅放入一个大一些的烧水的的锅里,锅里水烧到65度关最小火慢慢加热.奶酪和牛奶隔热水搅拌至光滑无颗粒。
  • 5. 搅拌好乳酪牛奶后分3次加入融化好的黄油,搅拌均匀。
  • 6.分次加入蛋黄,加一个搅拌一个,这个时候动作要快,马上把蛋黄搅拌均匀。
  • 7.加入过筛的低粉和玉米淀粉搅拌均匀,用橡皮刮刀操作或者手动打蛋器操作都可以。
  • 8. 蛋白加入柠檬汁打成粗泡后分两次加入细砂糖打成湿性发泡(提起打蛋器的时候发泡挺立,但尾端是弯曲状的)。
  • 9.取一部分蛋白到蛋黄糊里轻轻翻拌均匀。
  • 10.再将拌匀的面糊倒入剩余的蛋白里轻轻翻拌均匀成乳酪蛋糕糊。
  • 11. 将蛋糕糊倒入椭圆型模具8分满,轻轻磕碰几下。
  • 12.烤盘里装水,将蛋糕摸放入烤盘中层水浴烘烤。160度先烤20-30分钟上色后,再调至145度再烤35分钟即可。
