  • 1.鸡腿洗净放锅内加水和料酒烧温热泡一下,不必烧开。
  • 2.提出腿骨,骨头可炖菜吃。
  • 3.去骨的鸡腿肉放保鲜袋加生抽(1勺半)、盐、葱姜和花椒揉一会放冰箱冷藏4小时以上。
  • 4.腌好的鸡腿肉剔除腌料,放在锡纸上。无锡纸用保鲜膜也可。
  • 5.锡纸使劲卷上,两头拧紧如糖果一样。
  • 6.用绳子扎紧放蒸锅蒸半小时。焖一会取出放凉。
  • 7.入冰箱冷藏半天,剥开放入盘内,注意里面有汤汁会流出,用盘子接住。
  • 8.横切块,汤汁放半勺生抽调味。可根据自己口味加蒜泥辣椒油等调料。
