制作冬季爽口小菜“泡什锦萝卜”
现在的萝卜的品种很多,今天就用四种萝卜泡一坛四川什锦小菜。里面有白萝卜、胡萝卜、心里美萝卜和青萝卜。此道泡菜叫做“泡什锦萝卜”。其做法简单,泡好后,可用辣椒油或花椒油拌食,也可炒菜用,还可以做酸萝卜鱼等。具体做法如下;

  • 心里美萝卜600克
  • 胡萝卜500克
  • 盐菜用粗盐100克
  • 干辣椒10克
  • 花椒粒3克
  • 香叶4片
  • 高度白酒50克

Steps to make 制作冬季爽口小菜“泡什锦萝卜”

  • 1.把各种萝卜条放入泡菜坛中压实。
  • 2.熬制泡菜汤,水中放入盐。
  • 3.再放入花椒、辣椒和香叶煮开。
  • 4.然后晾凉凉透后才能使用。
  • 5.把晾凉的味水倒入坛中。
  • 6.然后注入适量高度白酒,大约一两即可。
  • 7.注好白酒后盖上坛盖,在坛口的密封水槽里注入清水,每周把水槽里的水换两次即可。
  • 8.萝卜泡制大约15天左右,萝卜发酵后品尝一下,感觉略带微酸便可食用。
