月饼准备工作之——冬蓉
从来没有自己做过月饼,自打前天月饼模具回来以后,心情一直很雀跃。先是比较成功地熬好了转化糖浆。今天下起雨来了,哪也去不了,干脆在家做起了月饼的另一个准备工作——馅料。
想做月饼,但又想做不一般的月饼,于是挑战了这个难度比较大的冬蓉月饼。做得人少,才有挑战的意义和难度。这就是俺滴性格!
二话不说,买回来冬瓜,开整啦!
整个过程可以说真的是非常考验耐性的!
俺用了一个多小时,才慢慢炒出了型来。
而且这个成品率非常低,俺用了1200克的冬瓜,最后就炒出这么一小碗来。

  • 熟糯米粉30克
  • 绵白糖50克
  • 食用油100克

Steps to make 月饼准备工作之——冬蓉

  • 1.冬瓜去皮挖瓤切成细丝,放置半小时。用力挤去冬瓜丝里的水分。可反复多挤几次,挤得越干,越容易炒成型。
  • 2.糯米粉30克,放锅里炒至微微发黄,铲出备用。
  • 3.挤干水分的冬瓜丝放锅里,小火翻炒。
  • 4.待炒至冬瓜明显变干时,分三次共加入五十克绵白糖。
  • 5.另外,分三次加入食用油共一百克。
  • 6.待炒至冬瓜出现糖色时,分两至三次加入熟糯米粉。
  • 7.直炒至冬蓉比较硬,水分几乎炒干的时候关火即可。
