广式枣泥豆沙月饼

  • 脱脂奶粉7克
  • 转化糖浆75克
  • 玉米油25克
  • 枧水2克

Steps to make 广式枣泥豆沙月饼

  • 1.准备好需用的原料。
  • 2.糖浆中加入枧水搅匀后,再加入玉米油继续搅拌均匀至乳化状。
  • 3.加入奶粉和过筛后的面粉。
  • 4.用刮刀拌和均匀成光洁的面团,盖上保鲜膜室温下饧2小时。
  • 5.将饧好的面团分成15克一个,枣泥红豆沙分成35克一个并揉圆。
  • 6.在模具中撒入少许面粉防粘。
  • 7.取一小面团用掌心略压扁后,放入枣泥豆沙球。
  • 8.用手将面皮慢慢的往上推,直至完全的包裹住豆沙球并稍揉圆。
  • 9.将月饼球拍上少许面粉后放入模具中。
  • 10.放于烤盘中,用力往下按压出清晰的花纹。
  • 11.再提起摸具往外推出饼坯。
  • 12.在做好的饼坯表面喷上少许水雾,放进预热好的烤箱175度5分钟定型。
  • 13.5分钟后取出,待稍凉后刷上一层薄蛋液(只刷凸起的花纹)。
  • 14.将烤箱的温度降至150度,放入刷了蛋液的饼坯再15分钟,烤至饼坯表面变黄、饼身中间鼓出呈腰鼓形就可以了。取出待完全晾凉后,装入保鲜袋再放进保鲜盒密封保存,待回油后就可以吃了。
