这个菜菜是湖南菜,也是以前在饭店吃过的,特别入味,下饭饭超级棒呢。在选择是凉菜还是热菜的问题上,还纠结了一阵,是热菜也是凉菜,最后还是算做凉菜类了。
   
    虽然叫擂钵茄子,但你没有钵,不擂,味道也是一样的好呢。  擂只是一种做法,在这个过程中,会让你体会到制作的乐趣。当然,擂烂的茄子也会更加入味。
   
    茄子的好处我想不多说大家也都知道吧,美味又营养的茄子,多吃有益哦。茄子是为数不多的紫色蔬菜之一,紫色蔬菜能调节神经使人心情愉快并能预防紫斑病,防治咳血。
  
    茄子营养丰富,含有多种维生素、蛋白质、糖及矿物质等。特别是富含维生素P,每100克紫茄中维生素P的含量高达720毫克以上,是其他蔬菜所不能比拟的。维生素P能增强人体细胞间的黏着力,改善微细血管脆性,防止小血管出血。
   
    茄子中的皂苷具有降低血液胆固醇的功效,研究数据表明吃茄子后人体内的胆固醇含量能下降10%。因而美国营养学家在介绍降低胆固醇的蔬菜时,将茄子排在首位。

    Steps to make 夏季开胃下饭菜菜-----擂钵茄子

    • 1.茄子洗净后切成条,上锅蒸15分钟左右。
    • 2.蒸茄子的过程中,准备好杭椒红椒和蒜。
    • 3.豆豉剁碎。
    • 4.把准备好的配料放在钵里。
    • 5.加入调味在钵里。
    • 6.锅里加入植物油,烧热后浇在钵里。
    • 7.搅匀一下。
    • 8.把蒸好的茄条逐条放进钵里,让茄条浸泡在调味中。
    • 9.把钵里的茄子擂烂,最后在上面撒一些熟芝麻,再淋一些芝麻油就OK了。
