豆沙月饼
趁着做月饼的热乎劲儿,继续上豆沙月饼。依然是30克一个的小月饼。虽然做的个数多一点,比较费事,不过吃起来比较没有负担

  • 奶粉5克
  • 枧水1克
  • 玉米油25克
  • 豆沙馅580克
  • 蛋黄1个
  • 蛋白1大勺

Steps to make 豆沙月饼

  • 1.准备面团料
  • 2.把转化糖浆倒入大碗,加入枧水
  • 3.搅拌均匀
  • 4.加入玉米油
  • 5.搅拌均匀
  • 6.倒入面粉和奶粉
  • 7.调成软硬适度的面团
  • 8.装入碗中,静置1小时
  • 9.把豆沙馅分割成24克一个的剂子
  • 10.面团分割成6克一个的剂子
  • 11.取一块面剂,按扁
  • 12.放入豆沙馅
  • 13.将面皮向上推起,包住馅料
  • 14.收口搓圆
  • 15.月饼模中装入少量面粉,摇晃均匀,倒出
  • 16.放入月饼坯
  • 17.扣在案台上,手柄下推,压实
  • 18.提起月饼模,将月饼轻轻推出
  • 19.所有月饼放入烤盘,表面喷水
  • 20.将烤盘放入预热180度的烤箱,中层,上下火,烤约5分钟,至定型
  • 21.取出,刷蛋液,放回烤箱继续烤约15-20分钟
  • 22.表面金黄出炉
