厨房小窍门—剩饭换清油
这不是菜,只是一个简单的厨房小窍门。其实在很早的时候我就想过发的,可又觉得,肯定大家都知道,所以又取消了这个念头。前几天在Q上,有位美食家的朋友问我,做过油炸食品之后,油是怎么处理的。我说用来炒菜,(说实话,炸过一次的油就倒掉,那实在是太可惜了,但毕竟油炸的食物只是偶尔吃吃,如果等到下一次油炸再用,在时间上还真没个概念,所以我会用来炒菜),她说炒菜会很黑。我当时第一反应就是,肯定没做清油的工作。所以我又决定来发布。
如果炸土豆、炸排骨什么的还好些,油里的渣不是很多,但如果是炸裹有面包糠之类的食物时,油里会剩下较多的渣,即使是用漏勺过滤,那也是无法过滤干净的。那样的油,无论用来炒菜还是继续做油炸,都会带来很不好的效果。想要把这样的油处理干净,其实很简单,只要一点剩饭就可以了。

    Steps to make 厨房小窍门—剩饭换清油

    • 1.这是一碗油炸过一次食物的油,里面有一些黑渣。
    • 2.准备一些剩米饭。(量不用太多)
    • 3.油倒入锅中,稍微加热后加入米饭,改成小火。
    • 4.有锅铲背轻轻推动米饭,在油里到处“走”一遍,油里的“渣”便会吸附在米饭上。
    • 5.取出米饭不要。
    • 6.剩下的油会很清澈。
