这道香辣虾在我们家已经畅销很多年了,我妹的川菜馆营业时,我将这道菜教给了我妹夫,大受食客们欢迎。成菜麻辣鲜香,每一个虾都吸进了调料的香味,一边吃,一边吮指,一边喝点冰镇啤酒或者饮料,无比爽快。夏天来了,喜欢吃川菜的你,也让你们家的餐桌也多一道下酒的好菜吧。

  • 酱油一调羹
  • 老抽半调羹
  • 花生油50克
  • 干辣椒50克
  • 红花椒一大把
  • 鸡精少许
  • 味精少许

Steps to make 吮指香辣虾

  • 1.买新鲜大海虾。
  • 2.去掉头和虾脑后,洗净,沥水待用。如果是请客,可以保留虾头,剪掉虾须即可。虾线可以用牙签去掉,也可以不用去。
  • 3.蒜去皮,切片。葱切寸段。
  • 4.干辣椒剪成小段。
  • 5.准备一大把红花椒。
  • 6.. 锅烧热后,放入花生油,烧热以后,将海虾倒入锅内,加盐,翻炒。
  • 7.水汽快干时,放入干辣椒,花椒,炒至吐油,干辣椒、花椒变色出香味。
  • 8.炒到吐油。
  • 9.加入蒜片继续翻炒出香味
  • 10.加入酱油和老抽,翻炒至水汽干,吐红油。这里的酱油和老抽,可以用蚝油代替,使用的分量约为两调羹。如果不是晚上做来吃, 可以在放蒜片这一步加入适量姜片,味道又会有不同。
  • 11. 加入葱段,少许鸡精、味精,翻炒均匀即可。
  • 12.装盘。
