紫薯开花馒头
众所周知,紫薯的营养价值和药用价值都特别高。紫薯中含有丰富的蛋白质,多种易被人体吸收的氨基酸、维生素、以及矿物质元素。其中紫薯中所含有的花青素和丰富的硒,可起到抗癌、抗衰老的作用,因此,特别受到多数人喜爱。
紫薯虽说口感不及红薯好,但用它来制作格式点心和馅料都是很棒的。这款用紫薯做的开花馒头,不仅颜值增加不少,味道也特别香甜。

Steps to make 紫薯开花馒头

  • 1.紫薯去皮切厚片,放蒸锅中蒸至软烂
  • 2.将蒸熟的紫薯捣成泥
  • 3.取100g紫薯泥、15g糖、100g面粉、2g酵母和5g温水(根据需要来加)
  • 4.和成光滑的面团后,盖上保鲜膜醒制15分钟
  • 5.再来和白面团,200g面粉中放入20g糖、2g酵母、少许食用碱面(也可以不加),倒入95g温水和成光滑面团,盖上保鲜膜醒制15分钟
  • 6.将醒好的紫薯面团分成大小均匀的剂子,并搓圆
  • 7.再把醒好的白面团同样分成大小均匀的剂子,并揉圆
  • 8.取一个白面团擀成圆形面皮,再把紫薯球放在中间
  • 9.像包包子一样包起来
  • 10.收口朝下,并在馒头顶部用刀划十字(如图)
  • 11.依次做好后放入笼屉,醒发20到30分钟左右(根据气温来决定,如果气温高,就要相对缩短醒发时间)
  • 12.这是醒发好的馒头坯子,口会张开一些;盖上盖子,中火蒸制约15分钟,焖3分钟才可开盖
  • 13.热气腾腾的紫薯开花馒头就蒸好了,在饱口福的同时也饱了眼福!
