牛肉生菜粥
小时候我们时时去小食店吃早餐,很多生滚粥,如艇仔粥、及弟粥、生滚猪肝粥、生滚肉片粥和生滚牛肉粥等,很多店家都是用小铜锅一碗一碗地加料生滚的,现在小铜锅倒是少见了,店家也改用其它锅来煮,都不能求太正宗了,生滚粥是广东人的早餐常备,配上油炸鬼(油条)或咸煎饼等,爽爽地吃过早餐,一天的忙碌旋即开始了。

  • 牛肉片约50克
  • 白粥1汤碗
  • 生菜丝1大把
  • 姜丝1撮
  • 葱花1把
  • 生抽1/2大勺
  • 胡椒粉1/4小勺
  • 生粉1小勺
  • 食油1小勺
  • 食盐1/3小勺
  • 胡椒粉1/3小勺
  • 芝麻油1/2小勺

Steps to make 牛肉生菜粥

  • 1.在牛肉片上放生抽1/2大勺、胡椒粉1/4小勺、生粉1小勺,抓匀,再加食油1小勺,也抓匀,静置20分钟;二、三、四。
  • 2.小锅放炉上,开大火,倒入白粥。
  • 3.把粥烧滚,加入姜丝和葱花。
  • 4.分散的加入牛肉,用勺子搅拌几下,把粥烧滚。
  • 5.加入生菜丝,关火。
  • 6.加入食盐约1/3小勺、胡椒粉1/3小勺、撒上芝麻油约1/3小勺,搅拌几下,出锅享用。
