酵母版芝麻饼干
做饼干比做面包容易,准备做酵母板,不放苏打粉和泡打粉,就不用怀疑这怀疑那啦,但凭良心讲,泡打粉和苏打粉用一点也没关系,又不是每天大量地吃,我们也可以选择买无铝泡打粉嘛。

  • 猪油2大勺(或黄油)

Steps to make 酵母版芝麻饼干

  • 1.面包机放牛奶1/2杯、低筋面粉1杯+1/4杯、酵母1/4小勺、白糖1小勺、精盐1/8小勺,搅拌成团后加入切薄片的黄油2大勺,再重新开机搅拌成面团。
  • 2.在一大碗里抹一层菜油或黄油,把面团放下,盖上薄膜,在较温暖的环境里醒发60分钟;三、四、五。
  • 3.时间到后取来面团,在案板上搓几下,盖上薄膜,静置20分钟,让面团得到松驰。
  • 4.用一小碗,放猪肉2大勺,低粉3约3/4杯,搓成油面团。
  • 5.把大面团包着油面团。
  • 6.封好口,搓圆。
  • 7.把面团擀成长形。
  • 8.叠成三折。
  • 9.擀成长形。
  • 10.再叠三折。
  • 11.又擀成长形。
  • 12.上面撒上芝麻,稍用面棍压一压,面坯两边同样操作,都沾上芝麻,第二次撒芝麻时均匀地撒一点点精盐,稍稍一点就够了,否则饼会太咸。
  • 13.用尺子和波浪形切刀,先按尺子的宽度在面坯上切割。
  • 14.再九十度切割成方块。
  • 15.放入烤盘里,每块之间留一点空隙,剩下在案板上的面坯,同时静置25分钟,预热烤箱350°F,时间到后用Bake档烤10分钟,用Broil 的低Low档烤3分钟,没有Broil 功能的,就用Bake档多烤3~5分钟。
