  • 鸭肉700克
  • 胡萝卜2根

  • 花椒1小把
  • 黄酒1汤匙
  • 郫县豆瓣酱1大匙
  • 1茶匙

Steps to make 湘西土匪鸭

  • 1.主要材料备齐;
  • 2.蒜瓣、生姜切片,胡萝卜去皮切块,线椒切丝、香菜切段备用;
  • 3.鸭肉切块后,放入冷水锅中煮开汆烫后捞出,沥干备用;
  • 4.锅中倒少许油烧热,下鸭肉过油煸炒,期间放入料酒和一大匙郫县豆瓣酱煸炒至鸭皮酥脆后盛出备用;
  • 5.炒锅中热油,放蒜片、姜片、一半的线椒丝爆炒,接着放入花椒、八角、草果、桂皮、陈皮、香叶煸香;
  • 6.接着下煸好的鸭肉,大火煸炒至均匀;
  • 7.接着倒入适量水,放入几颗冰糖,盖上盖子大火焖煮20分钟左右;
  • 8.焖好后开盖放入胡萝卜,盖盖再焖5-8分钟;
  • 9.焖好后开盖放入剩下的线椒丝翻炒,放少许盐调味。汤汁接近收干时,撒香菜翻匀即可装盘。
