    Steps to make 肉丝炒酸菜粉

    • 1.原料:酸菜,猪肉(最好五花肉),粉丝,干红辣椒,花椒,葱,蒜。
    • 2.洗好的酸菜改刀切丝,不要切太粗,切好后倒入清水里,然后用手把酸菜丝捞出来,挤出水分备用。猪瘦肉切丝,切好的肉丝放碗里加入一勺料酒腌制一会儿。肥肉切片。
    • 3.葱姜蒜干红辣椒各改刀。粉丝用凉水泡一会儿,不要泡太久。
    • 4.锅烧热倒入凉油,下腌制好的肉丝滑散,加入一勺生抽,炒至变色捞出碗里备用。
    • 5.不用洗锅,继续倒入肥肉,熬成荤油。建议多放一些肥肉,因为酸菜吃油,多放一些会好吃一些,即使不放瘦肉也一样好吃。
    • 6..熬出荤油后倒入葱姜蒜花椒以及干红辣椒炒香。
    • 7.加入酸菜翻炒一下。
    • 8.加入炒过的瘦肉丝翻炒均匀。
    • 9.加入少量清水,不用末过酸菜。
    • 10.加入粉丝,倒入少量生抽,盖锅盖儿中火焖2,3分钟。
    • 11.出锅前撒点蒜末,鸡精即可。我家的粉丝很好熟,只要之前用清水把粉丝泡软为好,利用蒸气焖2,3分钟左右差不多就熟了。
    • 12.盐要酌量加入,我最后没放盐,因为之前加过生抽,还有我家自己掩的酸菜咸度高,所以就不放盐了。
