花蛤蒸蛋羹
蒸鸡蛋羹其实一点不难,但要蒸的漂亮,蒸的好吃,还是有一点讲究的,就关键的就是蛋与水的比例。这时有的人可能会说蒸蛋还要放水?是的,蒸蛋羹想要鲜嫩有弹性是需要放水的,水多了会比较稀,不成形,水少了又会太硬太实,吃起来没弹性,最好也就简单的办法就是用蛋壳来量水,一般一个鸡蛋就兑半壳水,这样无论鸡蛋大小都能轻松应对。这次的蒸蛋羹我还加入了海鲜——花蛤。既能增味提鲜,还能补钙,对孩子长个益智特别有帮助,快来看看吧。

Steps to make 花蛤蒸蛋羹

  • 1.先将所需要的食材准备好,花蛤要提前泡水吐出泥沙,这样吃的时候才不会有沙子影响口感,
  • 2.将鸡蛋打入耐高温的容器中,加入半蛋壳的清水,再加入少许的盐,
  • 3.并用手动打蛋器搅拌均匀,
  • 4.再放入吐好泥沙的花蛤,如果希望花蛤都张开好看,可以先用小刀将其撬开,这里我没有撬开,所以蒸出来的花蛤比较自然,有张开的,有合在一起的,
  • 5.一切就绪就可以上锅蒸了,蒸汽料理锅的水箱加入适量的纯净水,再把装蛋液的容器盖上盖子,
  • 6.也可以盖上耐热保鲜模,再盖好料理机的盖子,时间选择12分钟,
  • 7.时间到打开盖子,就可以品尝了,因为之前加了一点点盐,所以不需要再加其它佐料了。
