双色花纹戚风蛋糕
虽然经常做戚风蛋糕,但一直坚持传统原味风格,很少花心思去做创艺性的,某天看到一朋友发了篇斑马蛋糕,好喜欢那漂亮的花纹,也佩服达人们的创意,真的是只有想不到没有做不到的东西,很多非常有创艺的作品都出自各美食高手,对于俺这种菜鸟级的,除过过眼瘾外只能有羡慕的份。
新款长帝e•Bake互联网烤箱-CRDF30A烤箱到家后,开始找时间折腾我的烘焙。

  • 色拉油30g
  • 牛奶30g
  • 细砂糖30g
  • 鸡蛋3个
  • 可可粉10g
  • 白醋2滴

Steps to make 双色花纹戚风蛋糕

  • 1.30g牛奶、30g色拉油和5g细砂糖装入无油、无水的干净盆中,用筷子搅拌至表面无大片油花状态
  • 2.分次加入蛋黄搅拌均匀,直至3个蛋黄全部加入并拌均匀
  • 3.过筛30g低筋面粉加入上述步骤中,用橡皮刮刀轻轻翻拌均匀
  • 4.蛋白中加入2滴白醋低速打成粗泡泡,分3次加入25g细砂糖慢慢快速继续打,直至打到提起打蛋器,蛋白能拉出弯曲的尖角
  • 5.将1/3蛋白取出倒入蛋黄糊中。用橡皮刮刀采用切拌或者从下往上翻拌的方法轻轻翻拌均匀
  • 6.将拌好的蛋黄糊全部倒进余下的蛋白盆中,用同样的手法翻拌均匀,直到蛋白和蛋黄糊充分混合
  • 7.取一半蛋糕糊,加入10g过筛的可可粉,用橡皮刮刀翻拌均匀
  • 8.用勺子倒一勺原味蛋糕糊进蛋糕模具中,再倒一勺可可味的蛋糕糊,如此重复多次,全部倒完后,用手端住蛋糕模具轻轻震动几下
  • 9.打开手机中的阿里小智应用程序,连接长帝智通烤箱,选择“面包/蛋糕”功能,设定温度160度,烘烤时间为50分钟,预热15分钟后,将蛋糕模具放最下层的烤网架上,35分钟后出炉倒扣,冷确后脱模
