  • 白糖色拉油

  • 1.紫薯洗干净,放锅里煮熟
  • 2.用勺子压成泥
  • 3.压好的紫薯泥倒入锅里
  • 4.加入白砂糖煸炒
  • 5.加入色拉油煸炒
  • 6.加入澄粉煸炒
  • 7.紫薯泥就做好了哦
  • 8.在转化糖浆里加入枧水搅拌均匀
  • 9.加入花生油,搅拌均匀
  • 10.加入面粉
  • 11.揉成面团,盖上保鲜膜静置一小时(面团不要过度揉挫以免出筋)
  • 12.紫薯泥分割成35克的小剂子,月饼皮分成15克的小剂子
  • 13.月饼皮包入紫薯,用手将冰皮慢慢的往上推(冰皮有点沾,手上沾点面粉)
  • 14.包好揉圆
  • 15.做好的月饼胚子
  • 16.做好的月饼胚上沾点面粉,以便下面方便脱模,放入模具(我一般是揉成椭圆形放入,这样才不会破坏饼皮)
  • 17.按出月饼花纹
  • 18.放入烤盘,表面撒点水,放入预热200度的烤箱烤5分钟后取出
  • 19.将一个蛋黄和一大勺蛋清混合成蛋黄液, 在月饼表面刷蛋黄水(只刷表面)放入温度180度的烤箱烤5分钟后取出,继续刷一层蛋黄液(表面侧面都刷)继续入180度的烤箱烤5分钟,继续刷蛋黄液(表面侧面都刷),继续入180度的烤箱烤5分钟。一共需要烤20分钟,先在200度烤5分钟,等月饼表面花纹定型。然后180度5分钟三次,第一次蛋黄液只刷表面,第二三次表面侧面都刷。烤好晾凉,密封保存,等回油后就可以吃了
