  • 全蛋液20g
  • 酵母4g
  • 核桃60g
  • 花生米60g

Steps to make 核桃花生吐司

  • 1.把核桃仁和花生米放烤盘于烤箱中烤熟晾凉,花生米去皮,与 核桃仁一起放保鲜袋中用擀面杖碾碎备用。(忘拍照片了)
  • 2.把核桃花生之外的其他制作面团材料放入盆中揉成团,15分钟左右,加入碾碎的核桃花生仁继续揉,至 能拉出薄膜的扩展阶段,在室温下发酵。
  • 3.发酵到 2.5 倍大(28 度的温度下需要 1 个小时左)。
  • 4.把发酵好的面团排出空气,平均分成6份进行 10分钟中间发酵。中间发酵好以后,就进入整形阶段了。每份面团用手慢慢搓成长条。
  • 5.打成辫子形状。
  • 6.放入土司盒,放到温暖湿润的地方(温度 35 度左右,湿度 80%)进行二次发酵。
  • 7.面团发酵到模具的 9 分满。
  • 8.发酵好的面团,在表面轻刷一层全蛋液,再撒上部分核桃花生碎。
  • 9.放入预热好 170 度的烤箱,上下火,中层,烤 35 分钟左右,至表面金黄即可出炉。
  • 10.冷却后,美味就可品尝啦。
