在寒风凛凛的冬季,鲫鱼的味道尤其鲜美,所以民间有‘冬鲫夏鲇’之说。鲫鱼豆腐汤是一道味道醇香健胃,清热,降火的汤。其汤汁浓白鱼肉鲜美。鲫鱼不仅鲜美肉质细嫩,而且营养全面。含大量的铁、钙、磷等矿物质,其营养成分也很丰富,含蛋白质、脂肪、维生素A、B族维生素等。经常食用能够增强抵抗力。鲫鱼有健脾利湿、活血通络、和中开胃、温中下气的药用价值,对肾脾虚弱、水肿、溃疡、气管炎、哮喘、糖尿病患者有很好的滋补食疗作用;配用豆腐,益气养血、健脾宽中,豆腐亦富有营养,含蛋白质较高,对于产后康复及乳汁分泌有很好的促进作用。对产后妇女来说则可补虚下乳。鲫鱼豆腐汤是一道老少皆宜的冬季养生汤。

  • 1.鲫鱼去鳞和内脏,抹上料酒,用盐腌渍10分钟。
  • 2.豆腐切成小块备用。
  • 3.锅中加入少量的油,下入鲫鱼煎制。
  • 4.煎至两面金黄。
  • 5.加入适量水,没过鲫鱼,
  • 6.再加入葱段和姜片。
  • 7.大火烧开,烧至汤汁变白。
  • 8.加入豆腐,转小火慢炖。
  • 9.小火炖到汤汁浓白,加少量盐和胡椒粉,再稍炖10分钟.关火,加入鸡精调味即可。
