牛角小面包

Steps to make 牛角小面包

  • 1.先将面粉与盐,酵母粉混合,然后逐渐加入温牛奶和成面团。
  • 2.和好的面团加入10g的黄油继续揉匀,使面团尽量光滑,然后将面团表面覆盖保鲜膜放入冰箱低温发酵大概1个小时。
  • 3.再用大概80g的面粉加入剩余的30g黄油和成油面团,和好后也放入冰箱冷藏。
  • 4.将发酵好的水面团取出,擀开成长条状。
  • 5.取出油面团,压扁,铺到水面团的一侧,然后将面饼对折,封好口。
  • 6.将面饼的两边向中间折叠,然后再对叠。
  • 7.对叠后的面饼放入冰箱冷藏40分钟左右,取出重复上述擀开在折叠的步骤,再将叠好的面团放入冰箱继续冷藏40分钟。
  • 8.将第二次发酵好的面团再擀开,折叠,然后放入冰箱冷藏40分钟。
  • 9.将发酵好的面团取出,切成块(这时可以看到很明显的分层),然后擀开切成三角状。
  • 10.将切成三角状的面饼再擀薄,然后顺着三角从大头卷起,即成牛角的形状。
  • 11.将生面胚子放入烤盘中,醒发30分钟左右,然后在表面刷上一层蛋黄液。放入预热好的烤箱,200度中层30分钟即可。
