京酱肉丝
“京酱肉丝”可以说是一道家喻户晓的名菜,其味道咸甜适口,酱香浓郁,肉丝滑嫩,再用豆皮将肉丝和大葱卷起食用,口感更加丰富,特具风味。
自从女儿喜欢吃这道菜后,我便开始学着去制作,而这道菜的主要环节就是炒酱,一开始总是把握不好火候,酱料炒不到位,使得肉丝挂不住酱汁,直接导致味道欠佳。经过多次的烹饪,现在终于能做出色香味俱全的“京酱肉丝”了。

  • 大葱1根
  • 姜粒8g
  • 鲜酱油2g
  • 玉米淀粉8g
  • 甜面酱55g
  • 15g
  • 葱姜水20g
  • 豆腐皮1张

Steps to make 京酱肉丝

  • 1.取一小节葱绿部分切小粒,生姜也切小粒,用清水侵泡半小时以上后,用手捞出葱姜粒,并用力将汁挤出
  • 2.豆腐皮切小块,放入沸水中焯制片刻
  • 3.捞出后用煮过的水将豆腐皮浸泡,以免豆腐皮表面变干,等食用之前将水倒出
  • 4.切好的肉丝中放入少许盐、鲜酱油2g、料酒、白胡椒粉和玉米淀粉8g
  • 5.倒入少许清水将其调拌均匀,放置10分钟左右
  • 6.大葱切丝
  • 7.均匀的铺在盘中
  • 8.起油锅,将肉丝炒熟后盛出
  • 9.留底油,放入甜面酱55g
  • 10.放入15g白糖,小火炒制甜面酱
  • 11.倒入葱姜水,用锅铲不停的搅拌
  • 12.炒至酱汁浓稠
  • 13.倒入炒好的肉丝,翻炒均匀即可出锅
  • 14.将京酱肉丝盛放在葱丝上,食用时可卷入豆腐皮中,味道非常棒!
