烧茄子
茄子好吃,但是做不好就易出差错。比如要么用太多的油,吃着香,但是摄入了过多的油脂对健康不利。要么少放油却炒出来干巴巴,吃着硬,一点儿都糯。要么就是黑乎乎的,看着就够了。

炒了这么多年的茄子,我也琢磨出几种方法,今天跟大家分享这道巨下饭又不吸油的烧茄子,好吃到连汤儿都不放过,拌米饭超级棒!茄子里的配菜可以经常调整,百吃不腻。

Steps to make 烧茄子

  • 1.材料准备好:圆茄子肉厚皮薄,更适合做这道烧茄子;青红辣椒洗干净,不能吃辣的就换成青红椒。
  • 2.辣椒切小块,茄子切滚刀块,茄子块要大一些、薄一些,尽量让每块都有皮有肉。
  • 3.茄子放大盆里,撒少许盐,拌匀,静置10多分钟;盐放得多,静置时间短,盐放得少,静置时间稍长。
  • 4.抓一把茄子,用手稍用力攥一攥,黑黑的茄子汁就出来了,此时的茄子块边缘呈透明状。
  • 5.温锅温油,油量跟平时炒菜的量一样,将茄子入锅,中火不停翻炒。
  • 6.不时用铲子按压茄子片,使其中的汁水更快地渗透出来;待茄子片变软,将青红辣椒倒入锅中。
  • 7.继续翻炒,至茄子片变透明状,且整体是一大坨状,淋酱油、蚝油、撒蒜末。
  • 8.快速翻炒均匀出锅。
  • 9.烧茄子,软糯不黑不吸油,巨下饭!
