这千张,我们当地都管它叫豆腐皮,一般我都爱去北市场,买一个东北大姐做的东北薄豆皮,她的豆皮,特薄,一张能顶别的摊主的三张,吃到嘴里特有韧性。她的豆皮特抢手,去晚了,就被抢光了。我家只有在周末,小朋友在家吃饭时,我才会多跑上二十分钟的路,早早的去买,认真的做。
这次的做法,也相对简单,不过是把豆皮切成宽条,打个结,用蚝油来吃,小朋友在呼过瘾,说,这一筷子夹起来,真值!

    • 1.准备千张豆皮。
    • 2.用两张叠在一起,用刀划成约2厘米宽的长条。
    • 3.打个结。
    • 4.红绿尖椒切长条。
    • 5.锅中油烧热,入葱花炒香。
    • 6.加入适量水、蚝油、高汤精、盐烧开。
    • 7.加入豆打好的豆结。
    • 8.当汤汁快收尽时,勾入水淀粉收汁。
    • 9.关火,加入少许芝麻油。
    • 10.装盘出锅。
