【广东】广式芋丝糕
年越来越近,每逢过年前婆婆都会蒸上几种不同的糕点,寓意蒸蒸日上——节节高,亦或是年年高(糕)升,而我较喜欢的是传统的糕点之一……芋丝糕

Details of ingredients

  • 香芋1个(去皮后约880)g
  • 腊肉约100g
  • 腊肠1根
  • 粘米粉150g
  • 温水200ml
  • 虾米30g
  • 约1/2茶匙
  • 砂糖1茶匙
  • 鸡精少量
  • 植物油少量
  • 五香粉1/4茶匙

Steps to make 【广东】广式芋丝糕

  • 1.部分食材:香芋 腊肠 腊肉 虾米
  • 2.香芋刨丝,腊肉、腊肠切粒,虾米泡软备用
  • 3.称取150克粘米粉,加入适量盐、砂糖、鸡精、胡椒粉以及五香粉等,倒入200毫升温水调成粉浆搅匀备用
  • 4.热锅,加入少量食用油,倒入虾米爆炒一下
  • 5.加入腊肠腊肉炒匀
  • 6.加入刨好的芋丝翻炒均匀,熄火;倒入预先准备好的粉浆拌匀
  • 7.取个方形深盘刷上少许植物油
  • 8.倒入⑥,并用锅铲压平,压实
  • 9.蒸锅里烧开水,蒸架上放入⑧,盖上锅盖中火蒸约30min至熟(视芋丝糕厚度而定时间)
  • 10.检查芋丝糕是否蒸熟:取一筷子插入芋丝糕里,筷子无生粉浆即熟
  • 11.蒸熟的芋丝糕可以直接食用,最好煎好再吃口感更佳
  • 12.冷却后脱模(可用小刀把周围划开,再整片取出)
  • 13.切件
  • 14.平底锅加入适量植物油放入芋丝糕中小火煎至两面金黄即可
  • 15.煎好趁热食用
