猪肝是猪体内最大的毒物中转站和解毒器官,所以,肝脏也会发生炎症,甚至发生肝硬化和肝癌。猪肝中含有毒素的血液是分散存在于数以万计的肝血窦中的。
因此,买回来的猪肝要在自来水龙头下冲洗10分钟,然后放在水中浸泡30分钟。此外,烹调加工时,为了消灭残存在猪肝里的寄生虫卵或病菌,在烹调时,时间不能太短,至少应该在急火中炒5分钟

Steps to make 百吃不厌—熘肝尖

  • 1.猪肝洗净,切成薄片用水淀粉和料酒抓匀,洋葱、青椒、胡萝卜切片备用。
  • 2.小碗中加入料酒、酱油、醋、糖、鸡精、盐、水淀粉兑成调味汁备用。
  • 3.锅中倒油烧制4成热时,把猪肝放入滑开至9成熟时捞出控油。
  • 4.锅中留底油,下葱姜蒜末炝锅。
  • 5.炒出香味后下洋葱片、胡萝卜片、青椒片和猪肝翻炒几下,倒入调味汁炒均,淋入少许香油提香即可出锅。
