简版豆沙小餐包
之所以称这个小餐包为简版,是因为它不用将面揉到完全扩展阶段,相对来说既容易成功,制作还简单。

Steps to make 简版豆沙小餐包

  • 1.面粉加盐、酵母粉、白糖,稍微拌一下,加水。水的份量没有写,是因为各种面粉的吸水量不同,建议边和面边加水。
  • 2.先和成絮状面,再揉成团,和成象耳垂一样软的面团。
  • 3.不停地揉面,直到能抻开薄薄的膜,揉成这样不超过20分钟。
  • 4.加入植物油。
  • 5.让面团将油全部吸收,揉成光滑的面团,放温暖处进行一次发酵。
  • 6.面团醒发至2-3倍大小,在表面戳个洞,不回缩,不塌陷。
  • 7.将面团排气,分成九个小块。
  • 8.分别揉圆,盖笼布静置15分钟。
  • 9.然后再排气,按扁,象包汤圆那样按出一个凹。
  • 10.加入适量豆沙馅。
  • 11.收口朝下放入刷过油的烤盘里,依次做好所有面包坯,相互之间留有一定空间。
  • 12.二次醒发注意保湿防干,发酵到2倍大小。
  • 13.烤箱190度预热5分钟,上下火160度,放下层,烤16分钟关火取出。
