脆皮大肠
猪大肠是很多人再熟悉不过的一种食材,清洗的过程可能有点麻烦特别是在冬天,但是做出来成品的美味,相信很多人都无法抗拒,比如卤水大肠、爆炒大肠、酸菜炒大肠、干锅肥肠、香辣肥肠...... 这次做的脆皮大肠经过焯、煮、腌、炸这四个步骤,让原本普通的大肠变得如此美味,每种不同的做法都有着不一样的口感

Steps to make 脆皮大肠

  • 1.如图,猪大肠一条750克可切成三段。用洗水冲洗两三遍后放入大碗,加入适量盐、生粉和白醋,里外分别揉搓三遍直至大肠没有异味,最后用再用清水冲洗干净
  • 2.将洗净的大肠放入锅内,加适量花椒、姜片,料酒焯一分钟后,捞起备用
  • 3.准备图中配料,香叶、八角、桂皮、丁香、干辣椒
  • 4.将焯过水的大肠,步骤3中的配料放入高压锅内,加适量清水上盖煮开后转小火压十分钟
  • 5.煮熟的猪肠捞出凉干水份
  • 6.佐料香精一包(可上淘宝网购买),这个用来腌制炸油炸类食材或是炒饭,味道相当好。
  • 7.将大肠切成小段放入大碗中,加适量盐、生抽、鸡粉、佐料精腌制30分钟入味。没有佐料可用其他香料代替
  • 8.腌制好的大肠加入一个鸡蛋黄,再加适量面粉用手抓匀
  • 9.锅内热油后放入猪肠炸至表皮稍定型
  • 10.捞出放置片刻,锅内继续烧热油后再次放入猪肠复炸
  • 11.成品图,真正的达到香脆的效果
