剁椒鱼片
大名鼎鼎的剁椒鱼头我们都知道,爱吃吧。胖头鱼的鱼头是首选的,因为肉多还嫩。可是问题来了,我们有时候买不到胖头鱼,怎么办?我用草鱼头蒸过了,草鱼头小,肉也少,变通的办法是把头切的长长的。可是,还会感觉肉太少了,吃不过瘾。
好吧,咱们今天不蒸鱼头了,直接蒸鱼片得了。一样的操作方法,一样的味道,全都吃肉肉好了。稍稍有一点点失误,应该将鱼肉片跟炒好的料拌在一起蒸,这样子,肉块不会粘一起,吃起来更方便,加上火腿片那就更美味儿了,等我再改良吧。
材料:草鱼肉一块
配料:葱姜蒜
调料:剁椒 泡姜 盐 糖 鸡油 烹调油 胡椒粉

    Steps to make 剁椒鱼片

    • 1.准备配料调料。
    • 2.、将鱼肉片成厚的连刀片。
    • 3.加盐抓洗。
    • 4.葱姜蒜切碎,起锅倒上烹调油和鸡油,先炒香小料葱姜蒜,再下剁椒。
    • 5.另备一个盘子,铺上大片的姜和葱段。
    • 6.将鱼片清洗干净,吸去多余的水份。鱼片是这样的,刚才没有拍。
    • 7.将鱼片盘在盘子里。
    • 8.小料炒好了,加生抽和糖及胡椒粉调味。
    • 9.将炒好的料倒在鱼片上,上锅蒸水开后计时,十二分钟出锅。
    • 10.淋上花椒油辣椒油,放上香菜碎,上桌即可。
