菠菜戚风蛋糕(六寸)
不吃蔬菜的宝宝有很多,喜欢甜食的宝宝更多,所以用蔬菜汁代替水来做蛋糕,一举两得。本方为2蛋6寸,八寸的话所有材料请加倍。

  • 菠菜汁30g
  • 白砂糖40g
  • 蛋糕粉40g
  • 玉米油25g

Steps to make 菠菜戚风蛋糕(六寸)

  • 1.洗净一小把菠菜,焯水后切碎,放进料理机添加少量水打成菠菜浓汁,称出30g备用。
  • 2.分离蛋白和蛋黄,蛋白盆要保证无油无水。
  • 3.蛋黄盆中加入玉米油,搅拌均匀。
  • 4.加入菠菜汁,搅拌均匀。
  • 5. 筛入蛋糕粉。
  • 6. 拌匀。
  • 7.蛋白分三次加糖打发至干性发泡。烤箱150度预热。
  • 8.取三分之一蛋白霜与菠菜蛋黄糊混合均匀,不可划圈,用炒菜的手法翻拌。
  • 9. 再取三分之一蛋白霜与蛋黄糊翻拌均匀。
  • 10.把9倒入蛋白盆,翻拌均匀。
  • 11.蛋糕糊完成。
  • 12.倒入六寸戚风模,震两下,把蛋糕糊里面的大气泡震出来。
  • 13.放入预热好的烤箱,从下往上第二层,烤箱调至120度,50分钟(请根据自家烤箱脾气适当调整)。
  • 14.出炉后提起模具震两下倒扣晾凉即可。
  • 15.成品。
