软嫩软嫩的铜锣烧

Emm 面包小白不得不承认,舒芙蕾很有难度,缺乏工具很难Duang起来……所以,今天就用舒芙蕾的配方做成了软嫩的铜锣烧。

不加泡打粉,小朋友吃一口就会爱上。做好的铜锣烧配上酸奶、水果酱、红豆沙,颜值超高,保证称霸你的朋友圈。

  • 牛奶60ml
  • 低筋面粉64g
  • 鸡蛋4个
  • CUCU白醋4-5滴
  • 白砂糖40g

Steps to make 软嫩软嫩的铜锣烧

  • 1.将冷藏过的鸡蛋蛋清蛋黄分离。
  • 2.蛋黄加牛奶,用蛋抽搅拌均匀。
  • 3.筛入面粉,划一字形搅拌至顺滑无颗粒状。
  • 4.蛋清加几滴CUCU白醋去蛋腥味,分三次加入白砂糖,先高速打1分钟,再低速打,打至提起打蛋器有小弯钩或者小尖角。
  • 5.用刮刀取三分之一蛋白霜加入蛋黄糊,翻拌均匀,再把蛋黄糊倒回蛋白霜的盆内,翻拌均匀。
  • 6.用厨房纸在平底锅上擦一层薄薄的油,待锅温热后放一勺面糊,盖上锅盖,小火焖一会,打开锅盖后翻面,大概30秒后就可以出锅了。
