彩色水晶鱼丸
女儿非常喜欢吃丸子,所以我也经常捣鼓些丸子,如鱼丸,肉丸,菜丸,豆腐丸等,这次做了彩色水晶的,看上去非常赏心悦目,吃起来Q 弹鲜美,值得亲们一试呢。
喜欢清淡口的,不用粘汁。如果口味重的,还是调一些汁粘着吃,别有一番风味。

Steps to make 彩色水晶鱼丸

  • 1.准备好材料,鱼肉去掉大的骨头
  • 2.鱼肉去皮,剁成细腻的鱼蓉,加入盐,胡椒粉,葱姜汁,料酒,味极鲜酱油,鸡精,搅起劲
  • 3.搅拌起劲的鱼蓉
  • 4.胡萝卜去皮切小粒,放入搅拌机中,加入少量水,打成细腻的汁
  • 5.菠菜放开水中焯水,变色后即可捞出
  • 6.放入凉水中过凉,捞出,切小粒
  • 7.放入搅拌机中,加少量水,打成细腻的汁
  • 8.打好的胡萝卜和菠菜汁
  • 9.胡萝卜菠菜汁分别加入十五克淀粉,搅成胡萝卜水淀粉和菠菜水淀粉
  • 10.搅拌好的鱼蓉分成二份,一份加入菠菜水淀粉,搅拌,再加菠菜水淀粉再搅拌,直至鱼蓉起劲及有弹性
  • 11.另一份加入胡萝卜水淀粉,搅拌,再加胡萝卜水淀粉再搅拌,直至鱼蓉起劲及有弹性
  • 12.搅拌好的胡萝卜鱼蓉和菠菜鱼蓉静放二个小时以上
  • 13.醒好的鱼蓉做成丸子,放入淀粉中,丸子完全粘上淀粉
  • 14.锅中烧开水,放入粘连淀粉的鱼丸,将丸子煮熟即可
  • 15.取一小碟,用芝麻酱,红油,味极鲜酱油调成汁,丸子粘着汁吃,别有一番风味哈
