   秋刀鱼是我们家常吃的,别看它是条外貌不起眼的小鱼,可鱼油含量却相当高。且因为它是以浮游微生物为食,较无重金属累积、戴奥辛污染疑虑,富含鱼油的鱼头、鱼眼窝都可一并下肚,而且价格非常便宜。只要够新鲜,不管如何烹调,都很美味。干煎秋刀鱼就是最简单的烹调方式。

  • 1.秋刀洗净,并均匀划上斜刀。
  • 2.加盐、料酒、抹匀腌制半小时。
  • 3.先热锅再热油,然后放入姜丝。
  • 4.待姜丝煎成微黄时下入腌好的秋刀。
  • 5.一面煎成金黄以后翻面再煎。
  • 6.两面分别煎成金黄并熟透以后,撒入少许青红椒再调入点料酒最后撒上芝麻即可出锅。
