香醇豆奶包
之前在某个面包店里吃过豆奶包,非常柔软,且豆奶香醇厚,没有添加剂。回来就试着自己搭配做了一下,做好发现就是这个味道—柔软香醇。

  • 高筋面粉250g
  • 牛奶80g
  • 豆浆80g
  • 酵母3g
  • 2g
  • 20g
  • 黄油20g

Steps to make 香醇豆奶包

  • 1.将除了黄油之外的材料放入厨师机搅拌。
  • 2.搅拌成初步面团后加入黄油。
  • 3.搅拌成柔软光滑的面团。
  • 4.也就是撑开的面团破洞边缘是光滑无锯齿状即可。
  • 5.面团覆盖保鲜膜,温暖处发酵。
  • 6.发酵至两倍大小。戳洞面团无回缩。
  • 7.轻拍排气后整理成圆形。覆盖保鲜膜或者烘焙布松弛15分钟。
  • 8.松弛好之后分成6份排气滚圆。排入烤盘,放入温暖湿润处,进行第二次发酵。
  • 9.烤箱发酵35度40分钟左右,最下层放入一碗热水保持湿度。
  • 10.发酵好的面团取出撒高粉,割成自己喜欢的花纹即可。
  • 11.烤箱180度预热,中层,上下火。面团放入5分钟后调制到160度20分钟,烤制到侧面金黄即可。
  • 12.出炉。
  • 13.第二天早晨的切面,气孔细密均匀。柔软却不失弹性。
