Steps to make 【鲁菜】糖醋鲤鱼

  • 1.把鱼清洗干净。
  • 2.把鱼前面和尾部切个小口子,用刀背在鱼身上拍拍,抽出鱼里面的筋(两面都要抽筋)。
  • 3.刀顺着脊骨斜切45度,把鱼切成百叶状。
  • 4.拎起鱼尾巴,把鱼身上均匀地抹上盐。
  • 5.然后再均匀地抹上料酒,腌制一会儿。
  • 6.把葱、姜、蒜切成末。
  • 7.准备好稍厚点的湿淀粉。
  • 8.把色拉油倒入锅中,大火烧。
  • 9.把鱼均匀地抹上湿淀粉。
  • 10.油热时,放入鱼炸。用漏勺和勺子把鱼定型炸制。
  • 11.两边炸到金黄色。
  • 12.捞出沥干油,放入盘中备用。
  • 13.原锅中留少许油,放入葱、姜、蒜炸香。
  • 14.加入番茄酱炒一炒,再加糖和醋。
  • 15.加入适量的开水,烧一烧放少许的盐,用原来的湿淀粉勾稍厚点的芡。
  • 16.最后淋入香油。
  • 17.最后把汁浇在鱼身上就可以了。
