【小炒猪颈肉】真心的脆口
  在冷鲜肉店出现之前,吃肉都是直接去菜市场,那时的肉,最多有肥瘦之分,至于这块肉究竟是哪里的肉,似乎从来没有在意过。
  现如今这肉是越分越细了,前腿后腿后座里脊,骨头也分大骨排骨脊骨等等,可是我们这儿还没有细到把猪颈肉摘出来买的程度。为了买这块肉,没有少费工夫,可就是没有买到。
  那一日 ,让老家一买肉的熟人留下一扇排骨,我去拿的时候才动刀分割下来,好家伙,看到猪脖子后面的这块肉了,连忙要下,寻思着怎么吃呢,烤?炒?还是煮?
  算了吧,还是小炒吧,先尝试一下,随后再说,反正我这老比乡也知道我要的是哪一块儿了,下次还可以吃到!
  小炒之后,感叹,真心的脆,猪肉吃出牛肉的滋味来了!

    Steps to make 小炒猪颈肉

    • 1.  材料图。
    • 2.细心的把这块肉切片,组织真好。
    • 3.(我腌肉比较随意,有时放的东西多,有时放的少,但大都先放水性调料抓之后,有时候会放些水里去,再放盐和粉粉,临炒之前再入些淀粉,甚至常常不放淀粉,腌制时间也没有一定之规,比较随意,家庭做菜,总是如此)
    • 4.将切好的肉片加姜粉胡椒粉生抽盐料酒小葱碎抓均匀。
    • 5.配菜改刀。
    • 6.炒锅倒油烧热,先下姜丝炒香。
    • 7.  下腌好的肉片翻炒。
    • 8.至变色出锅。
    • 9.用少量的油,炒香配菜中的葱姜蒜。
    • 10.再放上辣椒。
    • 11.将炒好的肉回锅。
    • 12.淋生抽拌均匀,加一点糖和盐,出锅了。
