Steps to make 秋天第一碗补中益气汤~火腿片黄鳝汤

  • 1.准备好鲜活黄鳝。
  • 2.黄鳝宰杀后去内脏,清洗干净,用剪刀从黄鳝背部剪断黄鳝骨,背下别剪断,锅内烧开水后关火,把黄鳝倒入氽一下水,这时黄鳝外表有一层白衣会脱落,然后用清水冲洗干净。
  • 3.火腿片提前用黄酒浸泡,处理好葱姜蒜。
  • 4.准备土锅一个,把清洗好的黄鳝倒入,加入火腿片和葱姜蒜,加入适量的清水,开始大火煮,待煮开后加入黄酒,撇去浮沫,继续煮20分钟左右,一般黄鳝肉可以离骨就可以(具体根据黄鳝的大小而定)。
  • 5.撒上葱花上桌。
  • 6.最后加入盐煮3分钟,撒上胡椒粉即可享用这道原汁原味,味道特别鲜美的火腿片黄鳝汤。
