    Steps to make 酱牛肉

    • 1.牛腱子适量,特别新鲜。
    • 2.切成大块(焯水后会缩小)。
    • 3.放入清水中浸泡两小时,除去血水。
    • 4.冷水入锅,放入姜片料酒,大火烧开。
    • 5.撇去浮沫,焯六七分钟。
    • 6.温水清洗干净,控水。
    • 7.这是用了两三次的老汤,从冰箱里拿出来。
    • 8.放入锅内煮开(没有老汤这一步忽略)。
    • 9.处理好的牛肉放入高压锅里面。
    • 10.配料备齐。
    • 11.把配料放入高压锅里面,(葱姜蒜,八角花椒尖辣椒,桂皮,香叶草果,冰糖,生抽,盐,料酒)酌情加水,我这次用老汤就没再加水。
    • 12.高压锅大火上汽后转中火压25分钟。
