原味戚风蛋糕

  • 低筋面粉80克
  • 色拉油50克

Steps to make 原味戚风蛋糕

  • 1.分离蛋清和蛋黄,分别放入干净的盆中。蛋黄加20克糖,色拉油搅打至油和蛋黄融合,再加入水搅拌均匀。
  • 2.筛入低筋面粉,呈“Z”字型将面粉和蛋黄糊拌匀,不要画圈搅拌。
  • 3.蛋清分三次加入30克砂糖,打发至硬性发泡,提起打蛋器有直立的小尖角。
  • 4.取三分之一的蛋白到蛋黄中,翻拌均匀。此时预热烤箱,170度。
  • 5.再将蛋黄糊倒回蛋白中,翻拌均匀。
  • 6.将蛋糕糊倒入模具中,将模具震两下,震出大的气泡。
  • 7.放入烤箱,中下层,上下火,烤50分钟左右。烤到40分钟左右时,观察蛋糕表面的颜色,如果颜色过深,可以加盖锡纸。
