广式紫薯月饼

Steps to make 广式紫薯月饼

  • 1.准备原料,没有枧水可以用食用碱1:3比例兑水。
  • 2.紫薯洗净去皮,上锅蒸熟后用料理机打成泥。加入适量植物油和白糖,用不粘锅小火炒去多余水份,晾凉备用。
  • 3.75克转化糖浆加入2克枧水搅拌均匀,至完全融合。
  • 4.加入25克植物油搅拌均匀。
  • 5.筛入100克低筋面粉。
  • 6.揉成光滑的面团。
  • 7.将面团分成15克一个的小团,紫薯馅分成35克每个。(用50克模具)
  • 8.取一个饼皮直接用手掌压扁,将分割好的馅料放在面皮中央。
  • 9.轻轻的收口,面团的延展性非常的好,慢慢的推即可,然后用掌心揉圆。
  • 10.粘少许干粉。
  • 11.放入模具压出花型。
  • 12.放在铺了油纸的烤盘上,入预热好的烤箱中层,上下火200度烤5分钟后取出,刷一层蛋液。
  • 13.再继续烤15分钟即可。
  • 14.烤好的月饼取出放在网架上晾凉,这时的月饼比较干硬,花纹也不明显,第二天回油后就好了。
  • 15.经过一天回油,月饼口感就松软可口了。
