夏天配粥小菜————腌蒜头
小时候,暑假期间妈妈总会腌制些咸鸭蛋,大蒜头之类的酱菜,配上一碗早已放凉的大米粥,很是惬意。上海目前市售的蒜头都带有点酸味,糖醋为多,实在吃不了那个酸,咬一口,眼睛眯成一条缝,前段时间正好看见有新鲜的蒜头卖,买来一些按网上搜来的一些做法尝试做了点带记忆中味道的蒜头。

  • 1..新鲜的蒜头剥去外衣,只留两层左右就可以,减去蒜头上的杆,只要留一点点,用清水泡一天左右。
  • 2.泡好的蒜头加盐拌匀腌制两天。
  • 3.太阳底下晒一天。
  • 4.老抽。生抽,白糖调匀待用。
  • 5.用一个干净的容器装入蒜头,倒入调好的酱油汁。
  • 6.密封保存半个月左右就可以。
