  • 1.食材准备好,不限这些品种,尽可能丰富,口感也取成型、脆嫩的。
  • 2.洋葱、蒜薹、红辣椒、豆腐干分别切小丁,丁不要太大,控制在1公分以内,越细碎越入味,口感越好。
  • 3.热锅凉油,肉馅入锅,用铲子迅速划散,倒料酒和酱油去腥、提鲜、上色。
  • 4.豆腐干、蒜薹、洋葱同时入锅翻炒;豆腐干质地紧密,不易入味,而洋葱富含汁水,炒出来的汁和香气以及蒜薹的香气能被豆腐干充分吸收,还可淋少许水翻炒,以使豆腐干柔韧一些。
  • 5.待洋葱全部变软、蒜薹变色,满锅洋溢着香气时,将芽菜和红辣椒丁入锅。
  • 6.芽菜有咸味,再撒适量盐调味,喜食色重的可再淋少许酱油,翻炒均匀出锅。
