  • 1.准备配料;

  • 4.甜面酱事先准备好;
  • 5.肘子拔去细毛,清洗干净;
  • 6.肘子凉水下锅;
  • 7.水开后去除血沫和杂质,捞出后再用凉水冲洗干净,控干水分;
  • 8.热锅加油,待油温烧至五成热时,依次放入花椒、八角、草果、香果、肉寇、桂皮、白芷煸炒出香味;
  • 9.放入葱段、姜片、蒜片、小茴香、陈皮、香叶一起爆香;
  • 10.肘子下锅,翻炒片刻;
  • 11.调入老抽、生抽、红烧汁、料酒、甜面酱翻炒均匀;
  • 12.炒至肘子均匀上色后加入开水,水量以没过肘子为佳,加入些许辣椒(依个人口味而定,加辣椒主要是为了提鲜味。);
  • 13.大火烧开后,转小火炖约2小时;
  • 14.放入冰糖和盐,翻炒均匀,大火收汁即可。
