凤梨酥
台湾的凤梨酥,由于外皮酥松化口,凤梨内馅甜而不腻,有着“中西结合”的特点,连西方人也赞赏有加,故逐渐成为岛外观光客最喜欢的台湾手礼之一。另外,凤梨酥和凤凰酥内馅的口味有些区别,凤梨酥是甜馅,而凤凰酥是咸甜口味的,其中在凤梨冬瓜馅的基础上加些咸蛋黄,口味更佳。

  • 低筋粉55克
  • 凤梨馅250克
  • 糖粉10克
  • 鸡蛋15克
  • 奶粉25克

Steps to make 凤梨酥

  • 1.材料:黄油:45克、糖粉:10克、盐:1克、鸡蛋:15克、低筋粉:55克、奶粉:25克、凤梨馅:250克
  • 2.制作:1.黄油自然软化后加入糖粉和盐一起先用硅胶刮刀翻拌均匀至无粉状
  • 3.2.再用电动打蛋器略微打发,加入鸡蛋液再充分打均匀
  • 4.3.再加入奶粉和过筛后的低筋粉用刮刀先拌一下
  • 5.4.再把面都到硅胶垫上,用手抓捏成团
  • 6.5.将面团分为15克一个
  • 7.6.再将凤梨馅分割为25克一个
  • 8.7.将15克的面团放手心按扁,中间放颗凤梨馅,将面皮包裹馅收好口
  • 9.8.将收好口的面胚在手心搓圆,同样方法将剩下的面团包完剩下的馅
  • 10.9.将包好馅的面胚放模具里按实
  • 11.10.将都按好的模具放烤盘里,烤箱上下火预热175度
  • 12.11.烤盘放入中层烤15分钟样子至表面边缘出现满意的微黄色即可出炉
  • 13.12.出炉后用夹子取下模具,凤梨酥放冷却即可食用
