避风塘大虾!

  • 北极大虾500g
  • 香菜末半碗
  • 色拉油少许(橄榄油)
  • 5g
  • 咸鸭蛋2个
  • 面包糠小半碗
  • 味精10g
  • 泰国辣椒一根
  • 黄油一小块

Steps to make 避风塘大虾!

  • 1.准备好葱花、香菜末、蒜末、面包糠、咸鸭蛋蛋黄取出碾碎、蛋白切丁、泰国辣椒切丁
  • 2.大虾是带壳的,这是已经剥壳后下锅先煎了一下,两面变色就可以盛出备用(热锅先煎虾,不放油,等里面变色再加少许油煎香盛出)
  • 3.热锅,放入黄油,关火(防止黄油变黑),融化之后重新起火倒入蛋黄炒20秒、依次加入蒜泥、辣椒、蛋白、面包糠、大虾、葱花、香菜,基本上两分钟以内就出锅(时间长了,面包糠就不会金黄色,颜色会变深),另外盐跟味精可加可不加,咸鸭蛋的味道我感觉已经到位了
  • 4.先炒蛋黄、再加蒜泥、辣椒
  • 5.装盘(稍微慢了一下,面包糠就没那么金灿灿了)
