沙琪玛也可叫做萨其马,是中式特色糕点,满族的一种食物。也是北京著名京式四季糕点之一。萨其马以其松软香甜、入口即化的优点,赢得人们的喜爱。满族入关后,萨其马在北京开始流行,时至今日,萨其马作为满族饽饽的美味,已经从北方传遍了全中国。萨其马是将面条炸熟后,用糖混合成小块做成。

  • 麦芽糖150克
  • 蜂蜜15克
  • 发酵粉3克

Steps to make 沙琪玛

  • 1.准备材料。
  • 2.将面粉、发酵粉、鸡蛋加水混合搅拌,揉成面团,醒15分钟。
  • 3.将面团像擀面条一样擀成薄片。
  • 4.面片上撒上薄面,向中心折叠,用刀切成细面条。
  • 5.切好的面条要抖开,撒少许薄面以防粘连。
  • 6.炒锅中放油,油烧至120度。
  • 7.分批把面条放入炸至黄白色时捞出沥干油。
  • 8.准备好麦芽糖、葡萄干清洗干净备用。
  • 9.将砂糖和水放入锅中小火边煮边搅拌,加入麦芽糖、蜂蜜继续搅拌,直至可以拉出丝来为止。
  • 10.将炸好的面条放入熬好的糖水里搅拌均匀,同时加入葡萄干、山楂糕、熟芝麻等关火。
  • 11.取一个干净的平底容器,将面条倒入事先涂好油的容器中,用力压平压实。
  • 12.放凉后取出切块装盘即可。
