洋姜,从小就知道的东西。后来听说有一种东西叫做菊芋,对糖尿病很有好处。再后来,才发现,原来这听起来很洋气的菊芋原来就是从小见惯的洋姜,而洋姜,也被叫做鬼子姜。这个名字是什么来历?
虽然也吃了许多年,但洋姜怎么吃,真的让人很伤神。洋姜好像大多是腌着吃,但是如何去腌,却是一头雾水,因为腌洋姜通常都是买现成。
忽然就决心自己腌洋姜。看了许多做法,找出些个或容易操作,或看起来像是惯常腌洋姜的样子,就试试呗。
用时最短的,是这辣酱腌洋姜,三天,三天即可。不过,却要两种酱,豆瓣酱,和辣豆瓣酱。而手边只有自家酿制的豆瓣酱,有点辣,索性就将二酱合二为一,一酱代之。
一开始只是想少少许做一些,临到头却发现这一点点的洋姜很难去计量调味料,干脆增加些洋姜,凑个半斤,这是便于计量的最小量。不能再多了。
做起来很简单,只是需要三天的耐心等待。终于可以开坛揭盖,洋姜被豆瓣酱略略染上些许红色,看起来很开胃的样子。

  • 1.用料:洋姜250克,辣豆瓣酱1大勺,盐7克,白糖1.5小勺
  • 2.洋姜用水清洗干净
  • 3.晾干表面水分
  • 4.切成3厘米厚的片
  • 5.加入盐
  • 6.拌匀,腌制约2-3小时
  • 7.有水渗出
  • 8.控干水分
  • 9.加入豆瓣酱和糖
  • 10.拌匀
  • 11.放入陶罐中
  • 12.密封保存三天
  • 13.三天后启封
  • 14.盛出食用
