香辣豆瓣炒花甲
夏天到了,花甲也成为了很受欢迎的海鲜,因为其价格实惠,味道鲜美,简单炒一炒就很好吃了,在大排档、宵夜摊也是热门的下酒菜,在炎热的夏天来杯啤酒,简直爽翻天。

  • 豆瓣酱1勺
  • 酱油1勺
  • 蚝油半勺
  • 大蒜2瓣

Steps to make 香辣豆瓣炒花甲

  • 1.花甲先用清水把壳洗干净,然后放水里吐沙至少2小时,然后再用清水清洗一遍。
  • 2.锅中烧水,水开了之后把花甲倒进去,加2片姜片去腥,煮至花甲开口。
  • 3.花甲煮至开口后要立刻捞出,然后用清水冲洗干净,这样可以使花甲肉更加爽脆,沥干水份备用。煮花甲的时间不宜太久,开口就要取出,因为还要回锅炒,否则会煮太老。
  • 4.把大蒜切碎、姜切片、辣椒、香葱切段备用。
  • 5.锅烧热,加入花生油,把大蒜、姜片放进锅里爆香,然后转小火,把豆瓣酱放入,煸炒出红油。放入豆瓣酱后要用小火,否则容易焦
  • 6.豆瓣酱炒出红油后把花甲放进锅里,大火翻炒,然后再加一点料酒翻炒均匀。
  • 7.然后可以加一点水或者刚才煮花甲的汤,但是需要沉淀过的,避免有杂质
  • 8.最后加入酱油、蚝油和盐,翻炒均匀后加入辣椒和香葱即可出锅。
  • 9.香辣的炒花甲做好啦,来杯小酒更搭,夏天这样吃最爽了。
