立秋了,还没有下市的茄子赶紧吃起来,最近爱上了凉拌,今天做的鱼香茄子,工序有点多,但是这些努力都值得的,超级的味美下饭。
味汁可以按自己喜欢的或家里有的调料来调制。今天家里没有泡椒也没有郫县豆瓣酱,就用的韩式辣酱也不错哦。

  • 茄子250克
  • 肉末100克
  • 2片
  • 4粒
  • 生抽2汤匙
  • 1汤匙
  • 香醋2汤匙
  • 韩式辣酱半汤匙
  • 2克
  • 水淀粉3汤匙
  • 料酒1汤匙
  • 鸡蛋1只

Steps to make 鱼香茄盒

  • 1.肉末加入适量姜末,葱末,蛋清一个,淀粉,清水少许搅拌均匀。
  • 2.茄子切为夹子,一刀切下不切断,下一刀切断。
  • 3.适量面糊加入清水,一个蛋黄拌匀,浓厚程度可按个人喜欢,可稠厚可薄。
  • 4.备些姜末,葱,蒜末。
  • 5.备好水淀粉,味汁备好(糖醋生抽,辣酱、料酒备碗中)。
  • 6.锅中把水擦干,加入油烧热。
  • 7.做茄夹子。
  • 8.夹好肉糊的茄盒粘上面糊。
  • 9.入锅炸制两面金黄。
  • 10.捞出来用天喜玫花纸巾吸去一些油。
  • 11.锅中炒香姜葱蒜末,加入备好的味汁,少许水或高汤,加入水淀粉搅拌至浓稠。
  • 12.做好的茄盒摆盘,淋入酱汁。
