玛德琳蛋糕

  • 色拉油30g
  • 鸡蛋6个

  • 柠檬半个

Steps to make 玛德琳蛋糕

  • 1.备齐食材。
  • 2.蛋白蛋黄分离,不小心给打散了一个蛋黄,还好蛋白液很干净。
  • 3.蛋黄中加入20g白糖、40g牛奶、30g色拉油,充分搅拌至乳化状态。
  • 4.筛入蛋糕粉。
  • 5.切拌均匀。
  • 6.蛋白加入盐、柠檬汁,分三次加入剩余的白糖打发。
  • 7.分三次将打发的蛋白霜加入到蛋黄液中,以“之”字形切拌均匀。
  • 8.将切办均匀的蛋糕液装入裱花袋。
  • 9.模具提前刷洗干净,用厨房纸擦干,薄薄的刷上色拉油,这个模具不杀也可以,基本不粘,注入蛋糕液轻震,最好8-9分满,中间放入切碎的巧克力。
  • 10.蛋糕液全部注入模具,剩余少许注入几个小模具,放在烤盘边上,一并烘烤。
  • 11.烤箱上下火160度预热,中层烘烤15-20分钟左右,这个模具有点偏小,我用了烤架支撑。
  • 12.出炉,装盘,这款小零食看着是不是很有食欲,孩子们非常喜欢。
