无水免揉松软吐司

  • 40g
  • 高筋粉25g
  • 牛奶150g

Steps to make 无水免揉松软吐司

  • 1.先做牛奶汤种,25g高筋粉加入150g牛奶。锅中加热,期间不停搅拌。
  • 2.变粘稠即可。
  • 3.盛出装入冰箱冷藏两小时以上。
  • 4.取出汤种加入面粉、奶粉、鸡蛋、糖。
  • 5.搅拌均匀,面团很湿,不要加更多的面粉,用刮刀拌匀即可。
  • 6.分次加入适量玉米油。
  • 7.我加了大概15g左右的玉米油。把面糊糊盖盖子放入冰箱冷藏八小时,我放了一宿。
  • 8.第二天取出加入高汤酵母。
  • 9.用筷子拌匀。盖盖子发酵。
  • 10.发酵好了。
  • 11.面板撒点干粉直接把面糊倒出来。
  • 12.用刮刀沾干面粉拌几下。
  • 13.擀平
  • 14.叠被子。
  • 15.多叠几次
  • 16.分三份
  • 17.每分擀成薄片
  • 18.卷起来
  • 19.放入磨具(450g)盖盖子发酵。
  • 20.发酵至两倍大刷蛋液。
  • 21.撒芝麻。200度烤箱预热10分钟。180度烤40分钟。
  • 22.叮!出炉!
  • 23.切片、手掰随你选。
